Spicy Peanut & Pineapple Treats
A little less traditional maybe, but a tasty little something to start the celebrations off with a bang! These are easy to make, and look great, and have a nice fresh palate, particularly good if you're celebrating in a warmer climate. Enjoy!

Ingredients
- Vegetable oil
- 8 spring onions , finely sliced
- 2 tbsp crunchy peanut butter
- 1 tbsp palm sugar or light brown sugar
- 2 tbsp soy sauce
- 1 small fresh pineapple or 8 rings from a tin, cut into cubes
- 1 lime
- 1
red chilli
, sliced finely, or 1/2 teaspoon of sambal
- handful coriander leaves
- Toothpicks to serve (optional)
Preparation
- Heat a little oil in a frying pan and fry the shallots until slightly brown. Reduce the heat and add the peanut butter, sugar and soy sauce and stir until the sugar has melted. The mixture should be sweet and salty. If desired a little salt or extra soy sauce can be added. Allow the mix to cool.
- Arrange the pineapple cubes on a plate, with each cube roughly 1cm thick. If using tinned pineapple with thinner slices than this, use two piece on top of each other and secure with a toothpick at the end. Put a heaped teaspoon of mixture on each. Top each with a squeeze of lime, a piece of chilli and a coriander leaf. Toothpicks may be useful in serving.
