Guacamole - the ultimate crowd pleaser
I have made this guacamole for many a party, adjusting it gradually with tips from friends that make it that little bit more finger lickin'. It's always the first thing to run out, even when I've made literally tons! Creme fraiche mostly serves to increase the mount you have, and make it a bit creamy. As you can get unpleasantly surprised when cutting open avocados, and find it's not all usable, adjust the creme fraiche to balance and not overpower the avocado flavour. For vegans, you cana either leave out or try replacing with soya cuisine.

Ingredients
- 4-6 ripe avocados (cut out any brown parts, they won't affect the flavour)
- 1/2 spanish red onion, diced finely
- 1 large tomato, or 2-3 cherry tomatoes, diced finely
- 1 tsp sambal oelek
- 100-150ml creme fraiche (depending on quantity avocados)
- 1-2 limes (or 1 lemon)
- Small handful of fresh coriander
- Salt and freshly ground pepper to taste
- Corn chips to serve

Mash the avocados in a medium sized bowl. Add all other ingredients, being careful to add creme fraiche and lime/lemon juice gradually to make sure they don't overpower the taste of the avocados (amounts are indicative, and dependent on the amount of avocado you have - see note above).
